May 27th, 2010

EmerilFarmToFork hc c

American TV personality Chef Emeril Lagasse wants to inspire cooks to use fresh, organic and locally-grown ingredients year-round.

Lagasse is the host of Emeril Green, a series about fresh and seasonal ingredients on Discovery’s Planet Green.

Coming out June 1, his new cookbook, FARM TO FORK: Cooking Local, Cooking Fresh (HarperStudio), shows how to cook a delicious meal with local seasonal ingredients.  He covers the basics: leafy greens, herb, milk, eggs, cheese, meats, fish, grains, homemade preserves and fresh fruit for every season.

Says Lagasse:

“Buy fresh, Buy local…is a slogan that both my restaurants and my family try to live by.  Support your local farmers markets.  Plant a small garden in your backyard, or even just an herb garden in pots on a windowsill. The wonder of planting a seedling, watching it grow, and harvesting it to eat is inexplicable. I can’t think of a better way to show a child the value of fresh food from the table.  It really can be about the choices we make.”

The new cookbook recipes include Crostini with Ricotta and Spring Peas; Sweet Corn Maque Choux; Fresh Mint Tea; Five Grain Salad; Spinach Sautéed with Garlic and Watermelon Rind Crisp Sweet Pickles.

Here is one of the recipes:

A new On Paper podcast series episode features Maria Rodale, chairman and CEO of Rodale Inc.

Recently, Rodale published her latest book Organic Manifesto: How Organic Farming Can Heal Our Planet, Feed the World, and Keep Us Safe.

In the podcast, Rodale shares her research and family business history as an organic pioneer and talks about chemical-free farm systems.

She discusses recent trends in organic including small company start-ups, younger female farmers and big businesses creating product lines.

Says Rodale:

“We’re not deciding for ourselves about the chemicals in our environment and in our bodies, unless we’re choosing organic…Organic farming is more productive, more profitable, more fuel efficient. And the surprise finding {from the Farming Systems Trial} was that organically farmed soil actually sequesters huge amounts of carbon, which means that it actually is one of the primary solutions to global warming.”

The new episode is available for download on OnPaperSeries.com and at iTunes.com and Zune.net by searching for “NewPage Corporation”.

Easy Greener Lunches

May 17th, 2010

EasylunchboxesBoxesBag729118991 qRPAW M 21 Easy Greener Lunches

Like many parents, Kelly Lester was concerned about her family’s lunch nutrition but wanted to spend as little time as possible in the kitchen.

So the American mom created the EasyLunchBoxes system of compartmentalized food storage containers and cooler bag.  Recently, Lester sent seeking greener review samples of her containers and cooler bag.

We tested the EasyLunchBoxes while traveling and found them easy-to-use and portable.  They are ideal for waste-free school or work lunches or travel snacks on-the-road.

The company says the lunch boxes are made of non-toxic, food safe polypropylene (PP) and they are BPA-, PVC- and phthalate-free.
